This weekend I decided to do something that I've been wanting to do....Once-A-Month Cooking. A while back I got a book "Once-A-Month Cooking, Family Favorites" by Mimi Wilson and Mary Beth Lagerborg, and was excited to use it. The idea of having meals ready for me in the freezer really appeals to me as my life can get a little hetic sometimes. Well, I finally got around to doing it. This book has a couple of different one month "cycles" and some two-week "cycles". I stared out with a two-week cycle. The book is great because it gives you a list of pantry things that you should have on hand, a grocery list for the recipes, and then a step-by-step of what to do.
I went shopping Saturday afternoon for all the ingredients, and then Saturday night I did most of the prepping...chopping, slicing, getting everything ready. Then Sunday after church (we went to early service so we were home by noon!), we put the kids down for a nap and I started! It really was easy, and the step-by-step guide really helped. With that guide I was able to get a couple of dishes going at the same time and not loose my place.
So here is the list of recipes that I now have in the freezer...

Upside-Down Fettuccine Bake
Coronation Chicken (a curry chicken salad type thing)
Chicken and Dumplings
Chicken Durango

Beef Pot Roast
Hamburgers Teriyaki
George Romney Meatballs
Vegetable Soup with Meatballs
Baked Mediterranean Cod
Tonight we are having the Vegetable Soup with Meatballs and it will be extra good because it started snowing this morning and is suppose to be a cold day. Now all I need to remember to do is get the meal out of the freezer and into the fridge the night before!

If You Give A Mom a Muffin...
A friend of mine posted this on facebook and I thought I would share it here. I love all the If You Give A.... books, and this one sounds just like my life right now!!
IF YOU GIVE A MOM A MUFFIN: "If you give a mom a muffin, she'll want a cup of coffee to go with it. She'll pour herself some. Her three-year-old will spill the coffee. She'll wipe it up. Wiping the floor, she will find dirty socks. She'll remember she has to do laundry. When she puts the laundry in the washer, she'll trip over boots and bump into the freezer. ...Bumping into the freezer will remind her... she has to plan supper. She will get out a pound of hamburger. She'll look for her cookbook. (101 Things To Make With A Pound Of Hamburger.) The cookbook is sitting under a pile of mail. She will see the phone bill, which is due tomorrow. She will look for her checkbook. The checkbook is in her purse that is being dumped out by her two-year-old. She'll smell something funny. Well...now what?
I've been wanting to blog for sometime, but never have. With this new year, I thought I'd start and make it a fun and easy way to help keep everyone up to date on "The Lucas Happenings!" So, I don't know what I'm going to blog about, or how often I'm going to be able to, but here it goes!
