This weekend I decided to do something that I've been wanting to do....Once-A-Month Cooking. A while back I got a book "Once-A-Month Cooking, Family Favorites" by Mimi Wilson and Mary Beth Lagerborg, and was excited to use it. The idea of having meals ready for me in the freezer really appeals to me as my life can get a little hetic sometimes. Well, I finally got around to doing it. This book has a couple of different one month "cycles" and some two-week "cycles". I stared out with a two-week cycle. The book is great because it gives you a list of pantry things that you should have on hand, a grocery list for the recipes, and then a step-by-step of what to do.
I went shopping Saturday afternoon for all the ingredients, and then Saturday night I did most of the prepping...chopping, slicing, getting everything ready. Then Sunday after church (we went to early service so we were home by noon!), we put the kids down for a nap and I started! It really was easy, and the step-by-step guide really helped. With that guide I was able to get a couple of dishes going at the same time and not loose my place.

Baked Mediterranean Cod
Tonight we are having the Vegetable Soup with Meatballs and it will be extra good because it started snowing this morning and is suppose to be a cold day. Now all I need to remember to do is get the meal out of the freezer and into the fridge the night before!
